1. Green Chilies (chopped) – 1 tsp
2. Onion (chopped) – 1 cup
3. Carrot (chopped) – 1/2 cup
4. Potato (chopped) – 3 medium
5. Eggplant (chopped) – 2 medium
6. Kalonji – 1/2 tsp
7. Cooking Oil – 8 tbsp
8. Salt – according to taste
9. Turmeric Powder – 2 tsp
10. Prawn (optional) – 8 pieces
11. Cilantro (optional) – as much as you want
First, marinate the cut vegetables with salt and turmeric powder and keep aside for 30-45 minutes. Then squeeze all the water out from the vegetables and keep them in a separate bowl.
In a pan add cooking oil and let it heat, then add the kalonji seeds and green chilies and wait till it pops, then add the onions. Sauté the onions till it gets lightly brown and then add the marinated (salt and turmeric powder) Prawns. Cook the Prawns for few minutes till the color change into orange. At these stage add all the marinated vegetables into it and stir well. Your heat should be high at these stage. Keep stirring occasionally till the vegetables get cooked. After few minutes turn the heat in medium and keep sautéing the vegetables. When your vegetables get soft and tender add salt if necessary, then switch off the heat and sprinkle some chopped cilantro (optional) and cover it with the lid. Then after few minutes serve hot with rice or roti.
